Spiced Walnut Muffins

2 cups flour
1 tbsp. baking powder
1 tsp. salt
2 tsp cinnamon
1/4 tsp. cloves
1/2 tsp. nutmeg
2/3 cup sugar

1/4 cup oil
1 mashed banana
1/2 cup vanilla soy yogurt
2 tbsp. ground flaxseed mixed with 4 tbsp. water
2/3 cup soymilk
1-2 cups walnuts

Preheat oven to 400 degrees.
Mix together flaxseed and water until thick and gluey. Set aside.
Mix together flour, baking powder, salt, cinnamon, nutmeg, and sugars.
In a separate bowl, mash the banana. Add oil, yogurt, flaxseed mixture and soymilk. Add to dry ingredients and mix well. Add walnuts.
Pour batter into muffin cups and bake for 23-25 minutes. Note that oven times may vary.
