Veggie Quesadillas

I’ve tried many different variations for my veggie quesadillas; I’ve subbed cheese with nutritional yeast mixtures, spicy vegan nacho dip, rice “cheese” slices, and most recently, shredded soy cheese.

The brand of soy cheese I favor is “Follow Your Heart”–flavor, mozzarella. This brand has been consistently the best melter and had the best flavor of others I’ve tried. And, it has been the best I can find in the area.

These quesadillas feature FYH in mozzarella, chopped onions, spinach, and a yellow squash. I serve them alongside rice and fat-free re-fried beans (no lard).

Since this is so simple, I’ve decided to forgo a recipe. Also, I apologize for the yellow-ish lighting; my apartment is very dim…
