Falafel Salad

One afternoon before work I decided to make use of some of my leftovers from a quite scrumptious falafel night. I usually opt for something light for my mid-afternoon after job#1 pre job#2 snack.

Falafel Salad


-As much fresh Romaine and Fresh Baby Spinach as you want

– 1 Falafel Patty, heated

-1/2 cup prepared couscous

-1/4 cup walnuts

-Red onion (I didn’t have any, but this would be so good!)

-Goddess Dresssing

Place couscous in a bowl. Chop greens and onion, toss around to mix. After re-heating falafel patty, break into pieces and toss with greens. Add greens and falafel to the bed of couscous. Top with walnuts and goddess dressing. Enjoy!
