Veganomicon splendor

What a week! Monday started off normal, but then the ice came! We’ve had an ice storm (not snow, pure ice!) every year for the last three years. I didn’t lose electricity this time but the roads were once again shut down for days. We did get a little snow, and the combination made a nice ice/dirt/snow layer cake. Anyways, I’m back in class today and I will go ahead and post some pictures of some lovely veganomicon recipes I made last week.

First, Jelly Donut Cupcakes:

For my JDC, I used grape jam and blackberry preserves. I should have just stuck to one, because I couldn’t really taste a difference. oops!

I didn’t want to leave the cupcakes out uncovered, so they didn’t get the crusty coating like they talk about in the cookbook and the sugar kinda melted into the top of the cupcake. Nevertheless, these were a nice change from cookies!

I also made the potato and greens soup from the big V. Though not my favorite, it was still nice to have warm me up on one of these cold winter days!

I’m not a big fan of the chunky type soups, or stews. I also favor spicy (very spicy) soups instead of creamy soups. My favorite right now is tortilla soup. I’m working on perfecting my own recipe, and once it’s tip top I will share it.

    This looks great. Vegan chili from my diing hall is my favorite soup right now!

    My fave is broccoi soup… but yours looks delish as well.
