Soupe de la semaine

Fall is nearing it’s end. As winter approaches, we are all tucking into our houses with warm and tasty treats. Days of hiking through fallen leaves are behind us, and we are just a week away from Christmas. Although many of us here in blogging land have been busy finishing up college semesters, I think we are all in the holiday mood. I hope that you all are enjoying this time of year and what it brings- friends and family together, warm wishes, and that contagious spirit of giving.

My boyfriend and I make a weekly shopping list, and each week’s menu includes one soup. This week we decided to make a potato soup. I had invented a potato soup recipe previously, and although delicious, it did not quite quench my desire for a thick and creamy soup. So last night, the gloves, err oven mitts were on!

Creamy Red Potato Soup

1 T. Olive oil
1/2 large white onion chopped
2 garlic gloves chopped
5 cups veggie broth (however you go about it!)
~ 4 medium sized red potatoes cut into cubes
1/2-1 cup soy or rice milk (more milk=more soupy-ness)
1 T. nutritional yeast
2 tsp. cumin (more or less. I love it though)
salt and pepper to taste
a handful or more of spinach

1. Heal oil in a large pot.
2. Add onions to pot and heat until they are translucent.
3. Add garlic, heating for just a few minutes.
4. Add spices.
5. Add veggie broth, nutritional yeast, and potatoes. Bring to a boil.
6. Reduce heat to medium and cover. Cook for about 20 minutes or until potatoes are tender.
7. Remove cover, reduce heat and mash potatoes up, leaving some pieces.
8. Add milk, simmer on low heat for about 10 minutes.
9. Lastly, add any more spice or veggies you would like. I threw in spinach, but go ahead with what ever veggies you have around!


I have no picture, but I will remember to take one the next time I make this soup. I have posted the recipe on as well.

I should have some more material in the next few weeks to post. Finals are all over for me as of 1:00 pm this afternoon, so I will definitely be baking and cooking more. And let’s not forget a big baking event coming just around the corner that I will most definitely have some sweet surpises for…
