Improv Soup
[Note: This soup is approximate. It was a total improvisation and I basically used the ingredients I had on hand. That being said, it was very hearty and comforting and I will probably replicate it.]
6 cups veggie broth (or water plus veggie stuff, you know)
1 cup leftover red lentils
2 cups frozen mixed veggies
1 can o’ pinto beans
Some yellow onion (I think 1/2 is what I used).
a little olive oil
Grab a big pot and put a little olive oil in with your onions. Cook the onions until translucent. Add water, frozen veggies, and red lentils. Bring to a boil. Lower heat and add beans, simmering for 20 minutes. The lentils won’t really be intact, but they add a nice texture to the soup. Top the soup with some freshly ground black pepper and whatever other seasonings you enjoy—such as cayenne and liquid smoke.
